First up, there's a guided tour of the olive mill. It's a surprisingly modern space, given its rustic surroundings, but it takes technical precision to create their award-winning olive oil. The proof is in the tasting, which you'll do plenty of with a professional guide explaining the oil's signature peppery flavour.The highlight of the tour is the 90-minute safari through the rolling olive groves and coastal vineyards. You'll travel in a fleet of beautifully restored vintage vans that help transport you back to the glamour and style of the 1970s. Round off the tour with a platter of local delicacies in the grounds of the estate. Istrian prosciutto, air-dried by the bora wind, and artisan cheeses are perfectly paired with chilled local Malvasia wine. First up is the Parque Ecológico do Funchal, where you'll explore the island's sustainability efforts. Depending on the month, you'll either plant a tree to help restore Madeira's ecosystem or check out the Interpretation Centre to see how this landscape has been protected over time. Riu, one of our local expert guides, says, “this is the kind of experience that lets you give something back to Madeira while discovering what makes the island so special.”After this, you'll head up to Santo da Serra for a 4x4 adventure that winds through hidden trails you'd never stumble across on your own. Then, things slow down with a walk along the Levada Serra do Faial, following Madeira's historic irrigation channels through dense greenery and streams. If the weather isn't playing ball, you might swap to the equally picturesque Paradise Valley Levada instead – either way, you'll get a feel for the island's deep connection to water and nature.To wrap it all up, you'll stop at a bar for a proper taste of local life. Sicília - Castelbuono visit and Sicilian dinner in the Madonie Mountains
Swap Cefalu's buzzy seaside scene for the simple pleasures of hill-top towns and farm estates in the Madonie Mountains. The beaches and coastline blur into olive groves and rural valleys as your bus makes the scenic journey to Castelbuono in the late afternoon. Mirco, an expert local guide, explains the significance of the town, “Castelbuono has always been a crossroads between the mountains and the sea — which is why you'll see so many layers here, from Norman walls to Baroque churches, all wrapped into a living town.”You'll have around an hour and a half to wander the narrow stone streets, where every archway frames another impressive view of this Medieval town. Among the palazzos and historic churches, though, the crowning glory of Castelbuono has to be the 14th-century fortress, Castello dei Ventimiglia. It's now open as a museum, so as well as taking time to appreciate the slower pace of the town and perhaps grabbing a gelato, you can take a look around the castle's exhibits of timeworn treasures and contemporary art collection. Mirco adds, “The Ventimiglia family built this castle to control the mountain routes. Today, it tells a very different story – from ancient archaeology to modern Sicilian artists.”In the evening, you'll head to Tenuta Luogo Marcese, a rural, agritourism-style farm estate. Sit on the terracotta-tiled terrace and enjoy a relaxed three-course dinner of seasonal Sicilian dishes, all prepared with local ingredients. Best of all, dinner comes with views of the sun setting over the Madonie hills.

Khao Lak - Island-hopping catamaran tour from Khao Lak with dinner at sunset
You're in for an afternoon of Thai island hopping at its finest on this catamaran trip to Phuket's southern isles. You'll snorkel and splash in the shallows, take in a bit of the local culture and tuck into a sunset dinner, before a wander through the colourful old town.Set sail from the Royal Phuket Marina and head south to Bon Island. Picture a desert island with palm trees overhanging the water and you're pretty much there. It's your first chance to take a dip in the Andaman Sea and it's a great spot for snorkelling on the coral reef – it's teeming with marine life. At your next stop, Koh Kaew Yai, you'll have free time to roam the island and visit its huge golden Buddha, which sits crossed-legged looking out to sea. There's also a small temple you can visit, complete with resident Buddhist monks.Dinner is served on a private beach at your next stop, Koh Lone Island. There's time to relax here and watch the sunset streak the sky with soft pinks and fiery oranges. If you choose the Wednesday tour, your day ends here with a minivan transfer back. But, if you choose the Sunday option, you'll cruise back to Phuket and finish off your evening with a stroll through the old town, where you can find local products and handmade trinkets – ideal for souvenir hunting. Take in the pastel-painted houses and eclectic street art as the scent of incense and spices fill the air.
